Are your avocados looking less than appealing? In our eyes, every avocado is gorgeous. Use overripe avocados to make this delicious and versatile Avocado Goddess Dressing!

Ingredients

  • 700 g (4) Avocados (overripe) 100%
  • 227 g (1 cup) of Yogurt (house-made) 32.43%
  • 224 g (1 cup) of Extra Virgin Olive Oil 32%
  • 162 g (2 cups) of Radish (tops) 23.14%
  • 112 g (1/2 cup) of Mayonnaise 16%
  • 60 g (3) Lemons, juice and zest (bar waste) 8.57%
  • 56 g (1) bunch of Chives (old) 8%
  • 56 g (1) bunch of Tarragon (wilted) 8%
  • 55 g (3 tablespoons) of Sherry Vinegar 7.86%
  • 21 g (1 tablespoon) of Honey, local 3%
  • 18 g (2 tablespoons) of Capers 2.57%
  • 15 g (5) Garlic Cloves, minced (trimmings) 2.14%
  • 10 g (1 1/2 teaspoons) of Anchovy (or salted blood line)1.43%

Directions

  1. In MX1200XTX X-Prep Blender set to speed 4, purée garlic, anchovy, capers, lemon juice and zest, vinegar and honey on 4.5 until smooth.
  2. Add herbs and radish tops. Purée until smooth. Mixture will be very green.
  3. Add avocados, mayo, yogurt and purée until smooth again. Mixture should be creamy and velvety.
  4. Slowly drizzle in extra virgin olive oil on speed 7.
  5. Taste and adjust seasoning if necessary.
